A searingly hot DO in the Córdoba
region of Andalucia. The wines are often thought similar
to sherry,
but are mainly not fortified. The secret weapon here is
the Pedro Ximenez grape which can make rich, dry age-worthy
wines or some of the greatest, most succulent concentrated
oil-black dessert wines in the world. These sumptuously
rich pudding Pedro Ximenez (or PX) wines are made from
very ripe grapes that are sun dried to concentrate the
sugars further and the wine is fortified with brandy. This
stops the fermentation dead, so keeping the natural sugars
from the grapes in the finished wine. Do as the locals
